Ultimate Vegan Seitan Gyros

 

INGREDIENTS

FOR SIMMERING

2 LITRES beef stock

2 TBSP soy sauce

3 bay leaves

6 peppercorns

SEITAN GYROS

1 1/3 cups vital wheat gluten

2 TBSP nutritional yeast

1/4 onion, roughly diced

1 TSP minced garlic

1/2 TSP salt

1/2 TSP cumin

1/2 TSP porcini powder

1/2 TSP cayenne pepper

1 TSP onion powder

1 TSP paprika

1 TSP garlic powder

1 TSP dry basil

1 TSP dry oregano

1 TSP black pepper

1/4 TSP liquid smoke (optional)

1 TBS tahini

1 TBSP soy sauce

1 TSP Worcestershire

1 TBSP Sriracha (or ketchup for mild heat)

3/4 CUP beef stock

Fresh pita or naan

Tzatziki

Chips

Tomato

Lettuce

Mustard

INSTRUCTIONS

  1. Add the vital wheat gluten to a large mixing bowl and set aside.

  2. In a large pot, add the 2L of stock, soy sauce, bay leaves, and peppercorns and bring to a simmer (not boiling).

  3. In a blender or food processor, add the rest of the ingredients (NOT the vital wheat gluten and simmering ingredients) and blend until smooth (1-2mins).

  4. Add this mixture into vital wheat gluten, mixing with a spoon to combine. Mix and knead for 3mins until well combined. Flatten into a 3-4cm thick ‘steak’ shape. Set aside and let rest for 10mins.

  5. Add to the simmering stock. Make sure it’s not boiling and partially cover with a lid. Simmer for 70-80mins until the seitan no longer feels like ‘jelly’ to touch. Remove and rest before cutting.

    Serve on fresh pita or naan with mustard, chips, lettuce, tomato and homemade tzatziki.
