SPIcy kale and romesco pasta

 

INGREDIENTS

ROMESCO SAUCE

1x tin tomatoes

2 red peppers

3 garlic gloves, minced

1 CUP raw almonds

2 TBSP parsley

1 TBSP lemon juice

2 TBSP olive oil

1 TSP smoked paprika

PASTA

1 TBSP olive oil

2 garlic cloves, chopped

3 CUPS kale, chopped

1 TSP chilli flakes

500g fresh pasta

INSTRUCTIONS

1. Place all Romesco Sauce ingredients in a food processor or blender and blend on high until smooth.

2. Add the blended ingredients to a small saucepan and cook on a low heat for 10-15mins, stirring occasionally.

3. Start cooking your pasta in a boiling pot.

4. In a separate pan, heat the olive oil on a medium heat then add the garlic and kale. Saute for around 2-4 minutes until the kale has softened. Add chilli flakes, combine and remove from the heat.

4. Once the pasta is done, combine all ingredients.
