INGREDIENTS

250g vegan chocolate, chopped into small pieces

1/3 cup mixed dried fruit (we used apricots and strawberries), chopped into small pieces (about .5cm)

1/3 cup mixed unsalted nuts (we used pistachios, almonds and pecans)

1 TBSP shredded coconut

INSTRUCTIONS

  1. Prepare a medium dish with baking paper and set aside.

  2. Bring a pot of water to a simmer, and place a heat-proof bowl over the top – make sure that the water below does not touch the base of the bowl. Place the chopped chocolate into the bowl and melt.

  3. Pour the melted chocolate into the lined dish – be sure you don’t spread the chocolate too thin by attempting to have it cover the whole base.

  4. Sprinkle the nuts and dried fruit evenly through the chocolate and then top with shredded coconut.

  5. Place in the fridge for at least an hour to set the chocolate. Once set you can chop it with a knife of snap it into smaller pieces with your hands.
