RED LENTIL DAL

 

INGREDIENTS

1kg red lentils

4 TBSP vegetable stock powder

14 CUPS water

1 inch ginger, cubed

1 CUP chopped vegetables (carrots and peas)

2 TBSP turmeric

1 TBSP cumin

1 TSP nutmeg

1 TSP garam masala

1 TSP chilli

1 TBSP oil

2 large brown onions, diced

4-5 cloves of garlic, minced

INSTRUCTIONS

  1. Wash lentils thoroughly to remove as much starch and debris as possible.

  2. Add stock powder, water, ginger and vegetables to a large pot (20L) and bring to a boil.

  3. Combine dry spices in a small bowl, set aside.

  4. In a separate pan, add 1 TBSP of oil over a medium heat. Add onion and garlic (and a pinch of salt and pepper) to the pan and cook until translucent.

  5. Add the spice mix to the pan, stirring continuously until fragrant. Around 30 seconds.

  6. Add the contents of the pan to your large stock pot.

  7. Once stock starts to boil, add the red lentils and cook for 12-13 mins until the lentils are cooked. The lentils might need more or less time depending on how you like them. Remove from the heat.

  8. Season with salt, pepper and extra chilli.
