KOREAN TACOS

 

INGREDIENTS

2 TBSP brown sugar

2 TBSP soy sauce

1 TSP sesame oil

1/4 TSP chilli flakes

1 inch ginger, minced

2 TSP olive oil

2 cloves garlic, minced

450g tofu, crumbled

Corn tortillas

Kimchi

1 CUP Mayonnaise

1 TBSP Sriracha sauce

Juice half Limes

1 Red onion, diced

Coriander to garnish

Sesame seeds to garnish

INSTRUCTIONS

1. In a small bowl, whisk together brown sugar, soy sauce, sesame oil, red pepper flakes and ginger.

2. Heat oil in a large pan over medium high heat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add tofu and cook until browned, about 5-6 minutes.

3. Stir in soy sauce mixture until well combined, allowing to simmer until slightly crispy.

4. Add kimchi to a small pan over a medium high heat to heat through. Set aside.

5. In a small bowl, whisk together mayonnaise, Sriracha and lime juice. set aside.

Serve tofu mixture in tortillas, topped with kimchi, red onion, cilantro and sesame seeds, drizzled with Sriracha mayonnaise.
