crispy garlic butter roast potatoes

 

INGREDIENTS

5 large washed potatoes

2 TBSP butter, melted

3 cloves of garlic, crushed

1/2 TSP salt

INSTRUCTIONS

  1. Pre-heat the oven to 200 degrees and line a baking tray with baking paper.

  2. Wash the potatoes well - keep the skin on. On a flat surface, carefully slice along the potato in half centimetre intervals, slicing about half way down the potato making sure you don’t cut the whole way through. Place the potatoes on the prepared tray.

  3. Mix the butter, garlic and salt in a small bowl. Using a pastry brush, coat the top of the potatoes with the garlic butter and put them in the oven.

  4. Cook for approximately two hours - brushing with garlic butter every thirty minutes. Flip them once during cooking, and then flip them again in the final 5 minutes to crisp the top.

  5. Remove from the oven and brush with garlic butter once more. Serve as a side.
